Hard boiled eggs are one of my favorite foods. They’re delicious in deviled eggs, egg salad, or just plain with a pinch of salt.
The most common difficulty with boiling eggs is that they can easily be overcooked, resulting in a strong green color surrounding the yolk and a sulfuric flavor. Here’s how to hard boil eggs without overcooking them, according to my way.
What if I told you that Fresh eggs are more difficult to peel than older eggs. If you’re going to make hard boiled eggs for Easter and want them to be easy to peel, buy them at least a week ahead of time (two weeks is even better; they’ll keep).
How to boil eggs? If you’ve boiled a batch of eggs and are having trouble peeling them, try shattering the shells all around without peeling them and soaking the eggs in water. Water often seeps through the cracks in the shell, making the egg easier to peel.
How to boil eggs quickly & easily
Hard-boiled eggs, in my opinion, should be quick and simple to prepare. In approximately 6-7 minutes, you can have a gorgeous creamy egg. Why wait half an hour for flawless eggs when you can have them in minutes? The last thing I want to do in the morning when I cook eggs for breakfast is wait so long for them to cook.
Eggs are a quick and inexpensive source of protein. You can make a satisfying breakfast, lunch, snack, appetizer, or dinner with hard-boiled eggs on hand. So get to work!

How to make hard boilded eggs
- 6 to 12 large eggs, straight from the fridge
1. Fill a pot halfway with water and crack the eggs
Fill a saucepan with cold water to about a quarter full. In the bottom of the pot, arrange the eggs in a single layer. More water should be added until the eggs are covered by an inch or two of water.
The more eggs you have in the pan, the more water you should pour on top of them. Cover 6 eggs with at least an inch of water, 7 to 12 eggs with 2 inches.
If an egg cracks while cooking, a teaspoon of vinegar added to the water may help keep the egg whites from leaking out. Some individuals also find that adding 1/2 teaspoon of salt to the water prevents shattering and makes peeling the eggs easier. As the water begins to boil, add one or both of these ingredients if preferred.
2. Bring to a rolling boil
Cover the pan and set it aside. Increase the heat to high and bring the water to a boil.
3. Remove from the heat, cover, and set aside
The eggs should be done perfectly about 10-12 minutes, depending on how cooked you prefer your hard boiled eggs. It may take a few minutes longer depending on your altitude, the shape of the pan, the size of the eggs, and the water-to-egg ratio.
It may take a few minutes less if you prefer your eggs not fully done. Stick with it once you’ve found a time that works for you, taking into account your preferences, the types of eggs you buy, your pots, stove, and cooking environment.
I also find that using this method, it’s quite difficult to overcook eggs. Without the eggs becoming overcooked, I can leave them covered for up to 15-18 minutes
If I’m making a large batch of eggs, after 10 minutes, I’ll take one out with a spoon, run it under cold water, and cut it open to check for doneness. If it’s not done to my liking, I’ll cook the other eggs for another minute or two.
4. Strain and run under cold water
Drain the hot water from the pan, being careful not to spill the eggs, and rinse them under cold water until they are cool to the touch. This will prevent the eggs from heating any further and make peeling them easier.
Alternatively, if you’re cooking a large batch of eggs, transfer them to a large dish of icy water with a slotted spoon. Allow them to cool for a few minutes or until completely cool.
5. Peel or store for later
I find it simplest to peel the eggs while they are still wet.
Hard boiled eggs should be stored unpeeled in a covered container in the refrigerator. In the fridge, eggs can produce scents, which is why it’s best to keep them covered.
They should be consumed within 5 days of purchase. Peeled eggs should be consumed within a day or two of being peeled.The advantage of this procedure is that the eggs will still be alright if you forget and leave them in the water for a few minutes longer than you intended.
Some people want their eggs to be cooked more softly or more hardly than others. Allow your eggs to seep in the hot water for only 6 minutes or so if you want them to be slightly transparent in the center.
How long to boil an egg
- 5 minutes: set white and runny yolk – just right for dipping into
- 6 minutes: liquid yolk – a little less oozy
- 7 minutes: almost set – deliciously sticky
- 8 minutes: softly set – this is what you want to make Scotch eggs
- 10 minutes: the classic hard-boiled egg – mashable but not dry and chalky
Tips & notes for perfect eggs every time
- Do not put cold eggs from the fridge into boiling water on the burner. Turn on the cooktop after putting the eggs in cold water. If an egg has a crack, a small amount of vinegar can be added to the saucepan. If the egg white starts to ooze out of the shell, it will assist to coagulate it.
- Over medium-high heat, boil the eggs.
- Set a timer and only cook the eggs for the appropriate amount of time.
- It’s preferable to buy eggs at least a week ahead of time if you’re going to build Easter eggs and want to make sure they’ll be easy to peel. Peeling older eggs is easy.
- Use some of these tips to make peeling the eggs easier:
- Use eggs that are at least a week old.
- Eggs that have been sitting for a few days are easier to peel.
- To the water, add 1/2 teaspoon of salt. Adding salt to the water may make it simpler to peel the eggs.
- 1/2 teaspoon baking soda. Some people recommend adding baking soda to the water, which raises the alkalinity and makes it easier to peel the eggs.
- Vinegar should be added (if you are using farm fresh eggs).
- Hard-boiled eggs can be readily peeled by adding a little vinegar to the water, which softens the shell.
